Kooperation bringt Molekulare Küche in den Klassenraum

Wie wird die Molekulare Küche in der Österreichischen Spitzengastronomie wahrgenommen? Diese Frage stellte sich eine MaturantInnengruppe der Hertha Firnberg Schulen HBLA für Wirtschaft und Tourismus in Wien im Rahmen eines Projektes. Die SchülerInnen interviewten die beiden Experten für Molekulare Küche an der Universität Graz, Assoz.-Prof. Dr. Helmut Jungwirth und Dr. Fritz Treiber aus dem Offenen Labor Graz. Beide beschäftigen sich bereits seit mehreren Jahren mit der Wissenschaft in der Küche. Das Maturaprojekt wurde jetzt mit einer Präsentation der Ergebnisse im Rahmen eines kulinarischen Events „Tanz der Moleküle“ abgeschlossen.

Peter Kirischitz, erfolgreicher Koch sowie Berufsschullehrer betreute die MaturantInnengruppe während des Projektes; denn ein wissenschaftliches Grundverständnis der Kochprozesse wird im Berufsleben immer gefragter. Um weiterhin Wissenschaft und Praxis auf hohem Niveau zu verbinden, wird noch in diesem Jahr eine Kooperation zwischen der Herta Firnberg Schule und dem Offenen Labor an der Uni Graz ins Leben gerufen.

Record of reported species: Styria wins the global City Nature Challenge

Observers in Styria recorded 5,158 different animals, plants and fungi as part of the international City Nature Challenge between 24 and 27 April 2026. This saw the region take first place in the "species" category. Ostrava in the Czech Republic made the most observations, with just under 140,000, whilst the San Francisco Bay Area had the highest number of participants, namely 3,019.
