Im grünen Bereich

Uni-Vorlesung von Chemikerin Renate Dworczak im Pub: Wirkungsweise pflanzlicher Farbstoffe

Rot in Tomaten. Dunkelblau in Hollunder. Gelb in der Ringelblume. Pflanzliche Farbstoffe spielen als umweltfreundliche Ressource in Produkten und Ernährung zunehmend eine bedeutende Rolle. Mit der Wirkungsweise sowohl in industriellen Produkten als auch in der Ernährung beschäftigt sich Ao.Univ.-Prof. Dr. Renate Dworczak, Chemikerin an der Uni Graz, in ihren Forschungen.
In einer weiteren Ausgabe von „Wissensdurst – die Wissenschaftsviertelstunde im Pub“ am 25. März 2014 im Lokal „Brot & Spiele“ erklärt Dworczak, wie die Natur aus wenigen Grundbausteinen die erlebbare Vielfalt unterschiedlicher Farben generiert und welche Vor- und Nachteile die natürlichen und erneuerbaren Stoffe gegenüber den synthetischen haben. Darüber hinaus veranschaulicht sie, welche Bedeutung natürliche Farbstoffe für die menschliche Gesundheit, etwa als Vorstufe von lebenswichtigen Vitaminen, haben können.

Renate Dworczak ist seit 2002 außerordentliche Professorin für Organische Chemie. Seit 2007 ist sie auch Vizerektorin für Personal, Personalentwicklung und Gleichstellung an der Uni Graz.

Die Veranstaltungsreihe „Wissensdurst – die Wissenschaftsviertelstunde im Pub“ ist Teil der 7. fakultät, des Zentrums für Gesellschaft, Wissen und Kommunikation an der Uni Graz. Das Projekt, von Dr. Wolfram Steurer initiiert, wird von den Studierenden Christian Fercher und Lukas Grumet geleitet.
